Most of the alcohol will burn off during cooking, but neither is completely alcohol-free.<\/p>\n<h4>Guinness Mac and Cheese<\/h4>\n<p>This flavorful super-easy stovetop mac and cheese is made with Guinness stout, sharp Irish cheddar and a touch of Dijon mustard. It\u2019s creamy and cheesy with an optional crunchy breadcrumb topping. Best part: It takes only about 20 minutes.<\/p>\n<p><strong>Yield:<\/strong> Serves 6<\/p>\n<div>\n<\/div>\n<h4>INGREDIENTS<\/h4>\n<p><strong>For topping:<\/strong><\/p>\n<p>4 tablespoons unsalted butter<\/p>\n<p>4 garlic cloves, minced<\/p>\n<p>\u00be cup breadcrumbs<\/p>\n<div>\n<\/div>\n<p>1 tablespoon chopped fresh Italian parsley<\/p>\n<p><strong>For mac and cheese:<\/strong><\/p>\n<p>2\u00bc teaspoons salt, divided<\/p>\n<p>1 pound elbow macaroni<\/p>\n<p>2 tablespoons unsalted butter<\/p>\n<p>2 tablespoons all-purpose flour<\/p>\n<p>\u2154 cup Guinness stout<\/p>\n<p>1\u00bd cups whole milk<\/p>\n<p>\u00bd cup half and half<\/p>\n<p>A few grinds of black pepper<\/p>\n<p>1 tablespoon Dijon mustard<\/p>\n<p>3 ounces cream cheese, cut into pieces<\/p>\n<p>3\u00be cups grated Irish cheddar cheese<\/p>\n<h4>DIRECTIONS<\/h4>\n<p>Begin by making the topping: In a medium skillet, melt 1 tablespoon of butter.<\/p>\n<p>Add minced garlic and cook, stirring constantly, for 30 seconds. Do not brown the garlic! Add breadcrumbs and cook on low heat until they turn a golden brown. Next, add the Italian parsley. That\u2019s it \u2014 transfer the topping from the skillet into a bowl and set aside.<\/p>\n<p>Bring a pot of water to a boil. When the water is boiling, add 2 teaspoons of salt. Cook the elbow macaroni until it\u2019s al dente.<\/p>\n<p>Remove 1 cup of the pasta water and set it aside (you\u2019ll need this later when you\u2019re making the sauce). Drain and rinse the pasta, then set it aside while you prepare the sauce.<\/p>\n<p>In a large saucepan over medium heat, melt 2 tablespoons of butter. Once it\u2019s melted, whisk in flour. Whisk for 1 minute to create a roux for the sauce.<\/p>\n<p>Continue to whisk as you slowly add Guinness stout, followed by milk, half and half, remaining \u00bc teaspoon salt, black pepper and Dijon mustard.<\/p>\n<p>Bring to a simmer and cook, whisking now and then, until the sauce thickens. This will take about 2 minutes.<\/p>\n<p>Add cream cheese and 2\u00bd cups of grated cheese. Stir the mixture until the cheeses are incorporated.<\/p>\n<p>Add cooked pasta followed by the remaining 1\u00bc cup grated cheese. Stir gently until the remaining cheese is melted and the pasta is heated through. Since the mac and cheese does not go in the oven, it is essential that the pasta is reheated in the sauce. If the sauce seems too thick, drizzle in a little bit of the reserved pasta water.<\/p>\n<p>Place the hot mac and cheese in a serving bowl and sprinkle on the topping. They\u2019re fudgy, rich and topped with espresso- and Guinness-infused frosting.<\/p>\n<p><strong>Yield:<\/strong> Makes 16-20 brownies<\/p>\n<h4>INGREDIENTS<\/h4>\n<p><strong>For brownies:<\/strong><\/p>\n<p>1 12-ounce bottle Guinness Draught Stout<\/p>\n<p>\u00be cup unsalted butter<\/p>\n<p>8 ounces semi-sweet chocolate chips<\/p>\n<p>1\u00bc cups granulated sugar<\/p>\n<p>3 large eggs, at room temperature<\/p>\n<p>1 teaspoon pure vanilla extract<\/p>\n<p>1 cup all-purpose flour<\/p>\n<p>\u00bd teaspoon salt<\/p>\n<p>\u00bd teaspoon espresso powder<\/p>\n<h4>For frosting:<\/h4>\n<p>\u00bd cup unsalted butter, softened to room temperature<\/p>\n<p>2 cups confectioners\u2019 sugar<\/p>\n<p>2\u20133 tablespoons reduced Guinness<\/p>\n<p>1 teaspoon espresso powder<\/p>\n<p>\u00bd teaspoon pure vanilla extract<\/p>\n<p>\u00bc teaspoon salt<\/p>\n<h4>DIRECTIONS<\/h4>\n<p>In a small saucepan, bring the Guinness to a boil over medium-high heat. Once boiling, reduce to medium heat and allow to simmer until reduced down to \u2154 cup, about 12\u201315 minutes. Set aside to cool for at least 10 minutes. You will use \u00bd cup in the brownies and the rest in the frosting.<\/p>\n<p>Preheat the oven to 350 degrees and grease a 9-inch square baking pan or line with aluminum foil or parchment paper, leaving an overhang on the sides to lift the finished brownies out (makes cutting easier!). Set aside.<\/p>\n<p>Place butter and chopped chocolate in a large microwave-safe bowl. Melt in 30-second increments, whisking after each, until completely smooth.<\/p>\n<p>Whisk in the sugar and \u00bd cup of reduced Guinness until completely combined. Whisk in the eggs and vanilla extract.<\/p>\n<p>Finally, whisk in the flour, salt, and espresso powder (if using). The batter will be thick and shiny. Pour\/spread evenly into prepared pan.<\/p>\n<p>Bake for 32 minutes, then test the brownies with a toothpick. Insert it into the center of the pan. If it comes out coated with wet batter, the brownies need more time. If there are only a few moist crumbs, the brownies are done.<\/p>\n<p>Remove from the oven and place on a cooling rack to cool completely in the pan before frosting or cutting.<\/p>\n<p>Make the frosting: In a large bowl using a handheld or stand mixer fitted with a whisk attachment, beat the butter on high speed until completely smooth and creamy, about 2\u20133 minutes. Add the confectioners\u2019 sugar, beating on low at first then increasing to high speed.<\/p>\n<p>Once creamy and combined, beat in 2 tablespoons of reduced Guinness, the espresso powder, vanilla extract, and salt. Taste. Add the remaining reduced Guinness if needed. If you want the frosting a little thinner, beat in a splash of milk.<\/p>\n<p>When cool, lift the brownies out by gripping the parchment overhangs and transfer to a cutting board. Spread frosting over cooled brownies.
